Oatmeal and Raspberry Muffins

generous 1 c. rolled oats1 c. skim milk1 egg1 c. superfine sugar (I used regular sugar)1/4 c. light olive oil1 c. all purpose flour2 t. baking powder1/2 t. baking soda1/2 t. cinnamon (optional)2/3 c. raspberries2 T. rolled oats for sprinkling on top.
Preheat oven to 375F. line 12 muffin cups w/paper liners. put the oats into a bowl and add milk. In a pitcher or small bowl, mix together egg,sugar and olive oil to combine. Sift the flour, baking powder and baking soda (and cinnamon if using) together in a bowl, then gently toss in raspberries. Gently stir in egg mixture, then oats and milk. Spoon mixture into muffin liners and sprinkle remaining oats on top. Bake 15-20 minutes or until well risen and firm.
