Ingredients
1 bag of whole wheat noodles2 cloves of garlic1/2 cup pine nuts1 tbsp extra virgin olive oil1 can red kidney beans1 bag spinach1 scoop ricotta cheese
Directions
1. Dice up and crush the garlic.
2. Boil the water for the noodles.
3. Heat the olive oil in a skillet, then add the crushed garlic and pine nuts, stirring until lightly browned. Lower the flame. How's the water for the noodles?
4. Add the noodles when the water is at a full boil, stirring occasionally while you follow the next steps.
3. Drain and rinse the kidney beans, then add them and the spinach to the skillet and stir in with the garlic and pine nuts, keeping the flame low. Cook just enough to slightly wilt the spinach & warm the beans.
4. Once the noodles are cooked, drain and put them in a serving dish that has a cover for storage, mix in the kidney beans/pine nuts, put the cover on and shake it up (or you could just stir it if you don't have a cover).
5. Serve with a scoop of ricotta cheese in the center.
