Pear Tofutti Quesadillas

Ingredients
1 flour tortilla, large1/4 of a small fresh pear, peeled, cored, chopped2 tbsp. Tofutti Better-Than-Cream-Cheese1/2 tsp. olive oil1/3 tbsp. raw onion, choppeddash of saltdash of pepper
Directions
Saute pear and onion pieces in olive oil with salt and pepper until lightly browned and soft, but not mushy. Remove from heat, combine with Tofutti, and turn into one side of a flour tortilla. Fold the tortilla in half. Saute filled tortilla in the same pan with remaining oil, until lightly browned. Let sit for 1 minute. Cut into four triangular wedges and serve with red pepper jelly, if desired.
Makes 4 1 1/2 inch sized wedges.
