2 cups chopped cooked chicken2 medium carrots coarsley chopped1/2 cup chopped onion1-2 lemons2 tbsp snipped fresh parsley1 garlic clove pressed1 can of 98% fat free reduced-sodium cream of chicken soup3 cans (14 1/2 ounces each) 100% fat free chicken broth1/4 tsp ground black pepper2/3 cup uncooked long-grain white rice
Chop chicken, carrots and onion. lightly spray with nonstick cooking spray. Add carrots, onion and garlic pressed. Cook and stir 2 minutes.Stir in chicken, lemon zest, juice, soup,chicken broth, and black pepper; bring to boil.Stir in rice;reduce heat Cover; simmer over low heat 15-20 mins or until rice is tender. Remove from heat;stir parsley into soup just before serving.
