Ingredients
2 slices crisp bacon1/2 corn tortilla, cut in strips1/2 roma tomato, diced1/2 jalapeno, finely diced1 Tbsp. onion, diced2 large eggs2 Tbsp shredded Mexican Style Cheese2 Tbsp Newman's Own Chunky Salsa
Directions
Cook bacon till crisp, remove from pan and drain on paper towel, crumble and reserve. Remove grease from pan and dispose. Cut half the tortilla into strips and lightly brown over medium heat, remove. Saute onion and jalapeno 1 minute, stirring. Add tomato and cook 30 seconds more. In a bowl, crack eggs and whip with a fork, pour over veggies, add tortillas and cheese. Stir, scraping bottom till eggs are almost set. Remove to plate. Top with bacon, cheese and salsa.
