Chicken w/ Sun Dried Tomato Pesto

4 - 6 oz portions of boneless skinless chicken breast1 can of quartered artichoke hearts, drained1 can of tomatoes w/ green peppers & onions1/4 cup of Sun-Dried Tomato PestoSalt & Pepper to taste
Brown seasoned chicken in non-fat cooking spray over medium-high heat. Remove and set aside. Pour into pan the tomatoes and cook for one minute over medium high heat to reduce. Add in pesto and artichokes and combine thoroughly. Add chicken and turn to coat. Cover, reduce heat to medium-low and simmer 20 minutes or until chicken is cooked through. Serve with brown rice or whole-wheat pasta.
