Roasted Italian Vege Salad

Ingredients
1 Red Onion5 Potatoes (about 1150g)Red PepperYellow Pepper3 Carrots4 Zucchini1/4 PumpkinGarlic, 5 cloves 2 tbsp Extra Virgin Olive OilItalian herbs
Directions
Slice veges into chunks and toss in crushed garlic, italian herbs (apply liberally) and olive oil, ad 1/4 cup water to bottom of pan, roast at 200 degrees celcius for 10 minutes, take out and toss, return to oven for another 10 minutes.

Serve with your favourite meat.
