Ingredients
1 cup rice wine vinegar4 tbsp sugar2 tsp salt2 tbsp crushed red pepper2 cups sliced cucumbers1/2 cup minced shallots2 tbsp cilantro
Directions
Makes 8 1/4-cup servings
Combine vinegar, sugar and salt in saucepan and cook for about 2 minutes until sugar dissolves. Add pepper and let cool. Slice cucumbers and mince shallots and place in bowl. Pour vinegar mixture over, mix and chill.
