Salmon with a mustard chive sauce

Fresh salmon (large fillet, or 3 oz cuts)Dijon mustardSmart Balance buttery spread with flaxChopped chives (fresh or dried)
Preheat oven to 350 degrees. Prepare a baking dish by spraying with Pam, or similar product. I occasionally use a lemon flavored spray oil with fish.
Special note: I usually buy a large salmon fillet that fits in a glass 10x13 pan. You will need to use more buttery spread, mustard, and chives if you are using a large fillet. The amounts listed in the recipe call for individual servings.
In a microwave safe container, melt the buttery spread. Stir in the dijon mustard and chives. Spread onto salmon. Bake 18-20 minutes for a large fillet; check after 10 minutes if using thinner, individual portions.
To check if fish is done, simply take a fork, and stick it in the fattest part of the fish. Fish should be moist, yet flake.
Recipe shows an individual portion. A large fillet may feed 6-8 people.
