Cholesterol Free Oatmeal Raisin Cookies

1/3 Cup Walnuts, Coarsely Chopped1/3 Cup Raisins1 Cup whole Wheat Pastry Flour2 t Cinnamon1/2 t Nutmeg1/4 t Salt3 Cups Rolled Oats2/3 Cup Canola Oil1/2 Cup Fruit Concentrate Sweetner1/2 Cup Raisin Water
Preheat oven to 350 degrees. Line baking sheets with parchment paper.
Toast walnuts in preheated oven for 7-10 minutes
Bring water to boil. Add raisins. allow to stand 10 minutes until raisins are plump. drain, reserve water.
Sift 1st four dry ingredients together. Stir in oats.
Whisk wet ingredients tegether until thick. Add to dry ingredients mixing until oats break down. Stir in nuts.
Use #24 scoop or 2 Tablespoons of dough to form balls. Flatten to 1/3 inch thick.
Bake until golden brown 15-18 minutes. Makes approximately 24 cookies.
