Italian Spinach Soup

Ingredients
* 1 medium onion, chopped * 6 cloves garlic, minced * 2 tsp. dried Italian seasoning, crushed * 2 Tbsp. butter * 2 Tbsp. merlot * 3 14-oz. cans chicken broth * 1 large potato, peeled and chopped * 20 ounces fresh spinach * 2 tablespoons Parmesan cheese, shaved * 4 grape tomatoes, quartered
Directions
35 minutes start to finish

saute shopped onion and garlic and italian seasoning in butter in dutch ove,. Add wine, cook on low 1 minute. Add Chicken broth and potato, simmer for ten minutes, covered. Add spinach, reserving enough for garnish on each serving. cook on medium low for 5 minutes more. Ladle soup into blender or food processor one third at a time, puree, place back in dutch oven, salt to taste with sea salt. ladle into serving bowls top with about a dozen spinach leaves, quartered tomatoes, and Parmesan cheese and serve.
