Celebration Coleslaw

Ingredients
red cabbagegreen cabbagecauliflowercelerycarrotsonionvinegaroilbasiltarragonsaltpeppersplenda
Directions
Thinly slice cabbage, celery and onion. Place in large bowl. Cut cauliflower into small flowerets, shred carrots adding to bowl.
In a small saucepan, combine the oil and vinegar and Splenda (can use sugar), herbs, salt and pepper and bring to a boil. Remove from heat and stir into the cabbage mixture. Refrigerate for at least an hour.
Slaw will last about 2-3 days.
Makes about 8 1 cup servings
