Ingredients
* Eggplant, fresh, 1 eggplant, peeled * Seasoned Squash and Onions w/Red bell peppers, 1 cup * Seasoning Blend, 1 cup * Oregano, ground, 2 tbsp * Thyme, ground, 1 tbsp * Basil, 1 tbsp * Garlic powder, 1 tbsp * Shrimp, raw, 3 oz * Rotel Extra Hot Diced Tomatoes & Chile Peppers, 2.5 cup
Directions
1. Cook down seasoning blend, eggplant, squash, onions.
2. Add spices, cook 5 min
3. Add the Rotel...cook 5 min
4. Add shrimp...cook till shrimp are done...25-30min
