2 tbsp olive oil2 cups portabella mushrooms sliced2 onions chopped3 cloves garlic chopped1 red pepper chopped1 tsp dried oregano1 lb pork tenderloin2 tbsp whole wheat flour1 tsp chili powder1/2 tsp salt1/2 tsp pepper3 cups milk9 oz whole wheat penne1 can (14 oz) tomato sauce
In large pan, add oil. Add mushrooms,onion, garlic, pepper.oregano and cook over medium heat until softened. Remove Cut pork into 1" pieces. Mix flour chili powder salt and pepper in large bag. Add pork and shake to coat. Add pork to pan and brown on all sides. Return vegetables to pan, Add milk, uncooked pasta and tomato sauce. Briing to a boil. Reduce heat and simmer until pasta is tender.
