1 Med. Red Onion1 Orange Bell Pepper1 Yellow Bell Pepper1 Green Bell Pepper1 med Jalapeno1 cup sliced, fresh mushrooms.5 cup canned green chili peppers8 Tbsp. Lindsay canned sliced ripe black olives8oz Mozzarella Cheese, part skim milk2 large eggs1 cup flour2 cups Hunt's tomato sauce - no salt added
Directions
Preheat oven to 350
Cut vegef abd toss into 13x9x2 pan
sprinkle with Mozzarella cheese

In a bowl, mix eggs, milk, and flour - pour over veges
Bake for abotu 20-25 minutes until the flour mixture is hardened.
