Copenhagen Cabbage w/gr Pork

16 oz ground Pork1 Medium head Cabbage (6-8 cups) chopped1 48oz V8 Hot & Spicy Juice3 c carrots chopped2 c celery chopped1/4 c onions (or more to your own taste)1 - 13.25 oz can of Mushrooms (drain liquid)1/2 teaspoon crushed red pepperSalt (optional)
Serves appx. 20 (1 cup servings)
Brown meat and onion together in a 6 qt. pot; drain off fat. Pour in 48oz of V8 juice and add all remaining ingredients. Cook on medium to low heat for about 45 minutes or until vegetables reach the consistency that you like. We like our veggies crunchy, so I probably only cook for about 30 minutes.
