Mexican Polenta Pie

Ingredients
1/4 cup mild enchilada sauce1 (15 oz) can black beans, drained and rinsed2 cups water3/4 cup shredded reduced-fat sharp cheddar cheese1/2 packet reduced-sodium taco seasoning1/4 tsp salt substitute3/4 cup yellow cornmeal
Directions
1- Boil water & salt.
2- Add cornmeal.
3- Reduce heat to medium low & whisk until thickened, about 5 mins.
4- Whisk in about half a packet of taco seasoning & the enchilada sauce
5- Spread polenta mixture into pie pan coated with cooking spray.
6- Bake uncovered at 375 degrees for 15 mins.
7- Mix beans & cheese & spread on top of polenta.
8- Bake uncovered for 20 mins.
9- Let cool 5 mins prior to slicing.
10- Top this with taco garnishes such as fat free sour cream, onion, sliced tomato, jalepeno slices,and black olives.
