Sheppards Pie

Ingredients
Lean ground beef 5 ounces4 potatoesOne bag of mixed frozen vegetables (spring mix)2 cans of italian style tomatoes1/4 cup skim Milk1/4 cup onion finely chopped1 cup cheddar cheese
Directions
Brown the beef and onion. Once the meat is browned, drain the fat. Add the vegetables and tomatoes. Cook for 5 minutes. Spread into 13x9 pan. Scrub and pierce the potatoes and microwave until done at least 6 minutes. Mash the potatoes with the milk and place on the beef mixture. Top with cheese and bake at 350 degree's for 15 to 20 minutes until the cheese is bubbly. Makes 8 servings.
