Low Carb Cream of Mushroom Soup

Ingredients
1 Large box fat free beef stock1 package whole mushrooms1 large onion, chopped5 large cloves garlic, minced5 Tbs butter1 tsp salr1/2 tsp pepper1/2 tsp thyme leaves1 Cup heavy whipping cream
Directions
This make 10 1 cup servings

Melt butter in pan, add onions, salt and pepper, garlic and thyme. Cook, stirring often until onions are opaque. Add mushrooms and cook until mushrooms are tender. Add broth and bring to a boil. Add cream heat through and remove from heat. Serve in soup bowls and garnish with a generous amount of nutmeg.
