Ingredients
12 oz diced lean ham, chop in smaller pieces1 cup chopped celery1/2 cup chopped onion3 cloves or 1 Tbsp fresh minced garlic2 cans of beef broth1 can black-eyed peas, rinsed1/4 tsp red pepper flakes3/4 uncooked long-grain rice
Directions
In large skillet, brown chopped ham in Fat-free cooking spray. Add celery, onion, and garlic. Saute 5 minutes. Add broth, and red pepper flakes. Bring to a boil, then add rice. Cover, simmer 20 minutes (Less if using Minute Rice). Add black-eyed peas. Cover and cook 10 minutes more or until liquid is absorbed. Makes 7 servings at about 1 cups each. Serve with green beans and cornbread.
