Creamy Yam Soup

Ingredients
Directions
5 cups vegetable stock (or water)8 cups yams, peeled and chopped2 large carrots, roughly chopped2 large celery stalks, roughly chopped1/2 tsp cinnamon1/4 tsp ground ginger ( I used 1 tsp)1/2 tsp salt
Bring stock or water to boile
Add all ingredients
Boil until veggies are soft, approx. 30 minutes
Let cool slightly, place in blender or food processor, a batch at a time and blend until smooth
Return to pot, keep warm on low heat for 15 minutes
Makes a lot, I estimated 12 1 cup servings
