Pork and Potato Skillet Meal

Ingredients
1lb. Pork Loin, sliced into 4 - 5 pices10 oz. frozen peas10.75 oz can Cream of Mushroom Soup4 oz. Canned Mushrooms1/4 c. water1/2 tsp. Thyme1 Tbsp. diced pimentos3 peeled and quartered potatoes
Directions
Spray 10 inch skillet and cook pork until no longer pink in the middle.

Peel and quarter potatoes, set aside. Mix together Cream of Mushroom soup, mushrooms, thyme, and water. Once pork is cooked pour soup mixture over pork, reduce heat cover, and simmer for 15 minutes. Add potatoes and simmer for an additional 15 minutes. Add peas and pimentos and simmer for and additional 10 minutes.

    looks like another one I would make. I would use fresh mushrooms though and try to figure a way to make it a little less in calories. - 3/13/07
