2 Cups of broccoli slaw2 Cups of shredded carrots1 cup of shredded red cabbage1 cup of jicama chopped fine1 Cup of finely sliced cucumber with skin.4 Cups of unsalted sunflower seeds25 sliced whole kumquats25 whole cherry tomatoes5 cups of baby spinach (add just before serving)10 tbs of S&W red wine oil free vinaigrette.5 avocdos=1/2 sliced per salad2 1/2 Cups of Italian Parsley chopped coarsely and mixed with ingredients to chill or store before serving.
Use 1 cup servings of mixed vegetables over 1/2 cup of baby spinach. Place 1/2 sliced avocado over each salad and add 2 Tbls of dressing per salad.
