Ingredients
1 bag small dry red beans 1 can stewed tomatoes1 cup frozen corn1 yellow onion chopped2tsp taco seasoning1 tsp cumin1 tsp garlic powder water
Directions
Place soaked and rinsed beans in a crock pot and cover with water. Add seasonings. Cook on low for 6-8. ( You can also use canned beans to cut down on the cooking time.) Drain the beans from the crock pot reserving 1 cup of the water add the remaining ingredients and cook in crockpot for 3 hours. Mash the beans batch to create a creamy thickness. Serve with cheese, sour cream or any toppings of your choice. Makes 8 1 cup servings.
