Whole Wheat Bread

Ingredients
5 c water2/3 c olive oil2/3 c honey4 tsp salt2 T yeast12+ cups whole wheat flour1/4 c gluten
Directions
Place all ingredients (but only 6 cups of the flour) in a heavy duty mixer bowl. Stir until well combined. Let sponge for ten minutes. Add remaining flour and enough, if necessary, until the dough clears the side of the bowl. Knead for ten minutes. If using a Bosch, place in four loaf pans and allow to rise for 25 minutes, or until the bread is an inch below the rim of the pan. If kneading by hand or by a less powerful mixer, then allow the dough to rise for an hour, punch down, place in pans. and allow to rise as above. Bake for 30 minutes at 350, Please note that this recipe makes four loaves of bread!
