Edamame Fried Rice

Ingredients
2 Scrambled Eggs2 tbsp Canola Oil1 tsp Minced Garlic1 Medium Onion1 sliced Scallion3 tbsp low-sodium Soy Sauce 2 cups instant Brown Rice1 cup frozen Edamame
Directions
serves 4

cook rice according to package directions. meanwhile heat canola oil in a large saute pan over medium heat. add onion and cook until soft, about 5 minutes. reduce heat to low. when rice is cooked, add to pan along with edamame, eggs, scallion and soy sauce. toss and serve.
