Sweet Potato Muffins

Ingredients
1 3/4 cup white whole wheat pastry flour1 1/2 cup splenda for baking1 1/2 tsp. ground cinnamon1 tsp. baking powder1/2 tsp. baking soda1/2 tsp. salt2 tbsp. flax seed, ground, blended until creamy with 6 tbsp. water1 cup mashed sweet potatoes1/4 cup canola oil1/4 cup unsweetened applesauce1/3 cup water
Directions
In a large bowl, blend together all dry ingredients. In another bowl, mix wet ingredients. Add to dry ingredients until just blended - do not overmix.

Drop batter into muffin tins sprayed with non-stick cooking spray.

Bake at 350 for 15 minutes.
