Greek Orzo Salad

Ingredients

1.5 cups dry orzo pasta1 T olive oil1/2 small onion, diced2 cloves garlic, minced1 small summer squash, diced1 small tomato, diced3 artichoke hearts, diced1/2 cup chopped spinach1 T capers1/4 cup chopped walnutsdrizzle of red wine vinegarsalt, pepper, and seasonings to taste1 oz crumbled low-fat feta cheese
Boil water, add orzo pasta, and cook until al dente
At the same time, heat olive oil in a pan over medium heat. Add diced onion and garlic and cook until translucent.add summer squash and cook for another 2 mins
Drain orzo and add to a bowl. Add onions, garlic, squash, tomato, spinach, artichokes, capers, and walnuts. Drizzle with red wine vinegar, mix, and season to taste with salt, pepper, oregano, and any other herbs you like!
Serve warm or cold topped with crumbled feta.
