Roasted Spiced Potatoes

Ingredients

20 small red potatoes, quartered1 large red onion, sliced or chopped in big pieces3 t garlic, mincedspice mix:1 t salt1 t cumin1 t mango powder 1 T coriander seed1 t black pepper corn1 T canola1/2 lime1 T cilantro, chopped1 t red pepper
Preheat oven to 450F.
Roast all of the spices over medium heat until fragrant. Set aside to cool.
Quarter the potatoes- I used red ones, but fingerling or new potatoes would be great too.
Grind up the spices. Toss with the potatoes, garlic, and canola oil- make sure the spices are evenly distributed.
Spread in a single layer on a baking sheet or pan. Bake at 450 for 20 minutes, or until cooked too.
Turn the broiler on and let them crisp up a little on one side (usually not longer than 5 minutes). Turn them over and repeat.
Plate up, squeeze half a fresh lime all over, and garnish with the chopped cilantro.
Other suggestions/options:
You may want to hold off on adding all of the spice mixture at first- it might be a bit strong for some
You could add turmeric or cinnamon to the spice mix
You can swap out the cilantro for pretty much any other herb- I would recommend parsley, though
I actually like these better at room temperature (as opposed to hot)
