Thai Chicken-Coconut Soup

Ingredients
8 cups chicken broth1 t. red curry paste6 garlic cloves, minced 1 T plus 1 t. grated ginger root1 lemon - zested and juiced1 lime - zested and juiced4 T. Thai fish sauce3 cups sliced shiitake mushrooms, sliced2 boneless skinless chicken breasts, cut crosswise in 1/4 inch slices2 cups light coconut milk3 cups fresh baby spinach2 T. chopped cilantro
Directions
Combine, broth, curry paste, garlic, ginger, lemon zest, lime zest, lemon and lime juice and fish sauce in a large saucepan. Bring to a simmer and add mushrooms, simmer for 3 minutes. Add chicken and coconut milk and simmer for 5 minutes or just until the chicken is done through. Stir in spinach and cilantro. Remove from heat and stir. Cover for 2 minutes, stir again and serve.
