Mexican Meatloaf

Ingredients
1lb. of ground turkey breast1lb. of lean ground beef1 pkg. taco seasoning1 8oz. can tomato sauce1cup oatmeal2 eggs1/2 cup diced onion1/2 cup diced green pepper1 tablespoon chili powder1 teaspoon garlic powder1 cup of reduced fat shredded colby jack cheese
Directions
Preheat oven to 350. You will need 2 loaf pans I use the kind that are 2 pieces so that any fat draines into the bottom

Mix all ingredients except the cheese in a big bowl until they are well combined. Divide mixture evenly into the 2 loaf pans.

Bake at 350 for 45 minutes. Remove from oven and sprinkly each loaf with 1/2 cup of the cheese. Return to oven for 5 minutes or until cheese melts.

Cut each loaf into 6 equal pieces.

    This is very good. I gave one loaf to my grandaughter and her family really liked it also. I used some of the meat mixture to stuff a green pepper. Also I used a can of diced chili peppers instead of the green pepper. I put a slice of cheese on top of the green pepper.

    We love this meatloaf. It's a nice twist on a classic american mainstay. I only make one loaf and use only the lean beef, everything else in half. This works out best for my family. Leftovers make great sandwiches too! - 5/1/13

    My husband, 1 year old and I thought it was very good! My 2 year old wouldn't eat it....because he is 2 and trying to control everything in his life...I'm sure he'll like it tomorrow though, when he picks it out for lunch! Wonderful! - 2/17/12
