Quinoa salad

Ingredients
1 cup dry quinoa2 cups water1 Tbsp olive oil2 plum tomatoes diced1 small zucchini, diced2 Tbsp lime juice4 tsp olive oil1 tbsp garlic powder (or use 1 clove fresh)1 tsp ground cumin
Directions
Place dry quinoa in dry pan over medium heat. Toast, stirring constantly, until the grains start crackling. Pour 2 cups water and 1 tbsp olive oil over the toasted quinoa and bring to a boil. Cover tightly and reduce to a simmer. Simmer 20 mins. In the meantime, dice the tomatoes and zucchini. Mix lime juice, olive oil and spices. Combine cooked quinoa and vegetables. Pour dressing over mixture and combine. Makes 4 lg servings.
