1.5 dried red beans, soaked in cold water overnight or for 8 hours4 cups water3 tbsp canola oil1 med. yellow onion, chopped2 tbsp minced garlic1 tsp ground ginger1/2 tsp ground tumeric3 diced tomatoes1 tsp coriander1/2 tsp cumin2 green serrano chiles, cut lengthwise in quarters
Drain beans. Boil, reduce to simmer for one hour in 4 cups water.
Heat oil, saute onion until brown. Add giger, garlic, and tumeric and stir for 2-3 min.
Add tomatoes, coriander, and cumin. simmer until sauce is thick. Stir into pot of beans.
Simmer, uncovered for 15-20 min. Dish tastes better the day after it is made. Reheat over medium heat.
