Ingredients
150g of ground, raw almonds (remove the brown peel, it is bitter)2 big garlic cloves (maybe start with 1 if you are not used to raw garlic)2 tablespoons white wine vinegar4 tablespoons virgin olive oilabout two handfuls of the insides of a white baguette bread (no crust)some white or green grapescold water and salt
Directions
Let the bread soak in some water (if you use cold water you will save a lot of refrigeration time) for 15m or so, then dump everything in the blender, except the grapes, and blend well. Add more water until it has the right consistency (which is in fact up to you) and salt to taste. Serve very cold, with a bunch of white grapes (supposedly sweet & yellow, I prefer green & acidic though), and some croutons* if you want.

* just fry some bread cubes in a bit of oil. You can use the outside of the baguette you used for the soup. This adds a considerable amount of grease to the recipe, though.
