Baked Potato Home Fries

Ingredients
* Butter, unsalted, 1.5 tbsp * Olive Oil, 1 tbsp * Onions, raw, .5 cup, chopped * *Baked Potato, with skin, 2 large cooked
Directions
Melt butter and oil in cast iron skillet. Add onions and cook a few minutes until tender. Chop potatoes into chunks. Add to onion and cook until crisp on all sides. Serve hot.
