Pineapple Bran Muffins

Ingredients
1 1/4 cups skim milk1 1/2 cups wheat bran1/2 cup brown sugar - not packed1 1/2 cups whole wheat flour1 Tbsp baking powder1 can (8 oz) crushed pineapple packed in juice - undrained2 egg whites
Directions
Combine the milk, wheat bran, and brown sugar, let sit for 15 mins.

Combine the flour and baking powder and stir to mix well. Add the bran mixture, the pineapple with juice and the egg whites. Stir until the dry ingredients are moistened.

Coat muffin cups with non stick spray and fill about 3/4 full. Bake at 350 for abt 18 min.

Makes 18 muffins
