Alter Idem's Peanut Butter Chicken

Ingredients
4oz Boneless skinless chicken breast, cut into small pieces1 Tbsp canola oil1 Tbsp crushed garlic1 cup stir-fry vegetables2 Tbsp Simply Jif creamy peanut butter1 Tbsp low sodium soy sauce2 tsp New Mexico chile powder2 tsp sesame seeds
Directions
Heat oil in skillet. Brown chicken and garlic together. Add vegetables and heat through. Mix in peanut butter, soy sauce, and chile. Add water to spread out seasonings and thin sauce. Heat through, adding sesame seeds near end. Serve over rice.
