Sweet-Glazed Tofu Cutlets

Ingredients
1 lb. extra firm tofu, drained1 T. canola or vegetable oil1 t. sesame oil2 T. agave nectar or maple syrup2 T. soy sauce2 T. dry red wine or sherry (can sub rice wine)2 scallions, sliced, for garnish
Directions
Cut the tofu into 8 equal slices, and pat each slice down well with a paper towell. Mix all wet ingredients together well, then add to a heated skillet. Add the tofu to the skillet and turn each slice immediately, so that each slice is coated on either side. Continue cooking, turning occasionally, until each side is browned and the tofu is thoroughly cooked.
