Strawberry Bread

Ingredients
1 cup all purpose flour2 cups whole wheat flour1 cup brown sugar1/2 cup canola oil, 1/2 cup applesauce unsweet1 tsp cinnamon1 tsp salt1 tsp baking soda4 eggs2 cups strawberries (can be increased to 4 cups depending on how STRAWBERRY-e you want it)2 tbs strawberry jam
Directions
1) Preheat oven to 350. Grease two bread pans or one bundt pan.
2) Quarter strawberries. Mix with Jam.
3) In seperate bowl, mix flours, sugar, salt, cinnamon, baking soda. When evenly mixed, add oil, applesauce, eggs and mix until moist throughout.
4) Add strawberry mixture.
5) Pour in pans and bake for 45 mins or until a toothpick inserted comes out clean.
6) Let cool in pans for 15 mins. Invert and enjoy!
Makes 2 loaves, 12 servings per loaf

    I made this in the bundt cake pan. My husband really likes it, but I think it's missing something. I'm just getting into this whole cooking thing, but, maybe some vanilla? It is good and I would make it again! - 6/27/11
