Sloppy Chicken Joe Stew

2 Tablespoons Olive Oil2 Pounds Ground Chicken1 Cup Chopped OnionsGround Pepper, to taste1 Teaspoon Garlic, Chopped1/2 Teaspoon Basil28 ounces Diced Tomatoes2 Large Potatoes, Peeled and Sliced2 Cups Carrots, Sliced1 Cup Celery, Chopped
Directions
Serves: 7

Heat the oil, onions, garlic, & basil in the crockpot to a sizzle. Add ground chicken; stir occasionally. Once the chicken is crumbling and starting to brown, add the remaining ingredients. Cook on low heat for 4 - 6 hours, stirring occasionally, until the potatoes are tender.
