Chicken Lettuce Wraps

4 Tbsp sesame oil8 ounces cooked chicken breast1 cup cooked quinioa2 cup cups cooked brown rice2 cups diced peppers (I use red and green)1/4 cup sliced green onions7 tsp garlic (minced- about 3 cloves)4 cups diced zucchini (I use yellow and green)1 cup diced celery1 cup bean sprouts11 Tbsp Mr. Yoshida Teriyaki sauce2 tbsp hosin sauce2 tbsp hot chili garlic sauceginger powder to taste
Makes 50 1/4 cup servings (lettuce not included in calories).
Chop all veggies and chicken to same size pieces (very small). Heat skillet or wok to very high heat. Heat oil, saute garlic and onions briefly and then add other veggies. Cook until soft and add rice, quinoa and cooked chicken.
Add Yoshida sauce and other seasonings. Simmer for 5ish more minutes. Serve in iceberg lettuce 'cups' rolled like a taco.
