40 clove chicken

Ingredients
1 roasting chicken4 whole garlic Handful of fresh thyme1 tsp salt1 tsp of pepper1 can of chicken broth
Directions
Preheat oven to 450 degrees.

Peel and split whole cloves of garlic (do not chop)

Stuff chicken with 3/4 of the cloves and the handful of thyme.

Rub outside of chicken with salt and pepper.

Place foil over chicken and place in oven for 30 minutes.

After 30 minutes add the can of broth to the bottom of your roasting pan.

Place chicken into oven to finish cooking, approximately 40 more minutes or until chicken is thoroughly cooked and the juices run clear.

Makes about 8 one cup servings.

    I make this but I add lemon juice and some white wine... also I cut the chicken and brown it in a little olive oil first - 10/16/09

    I am going to cook this recipe today.. sounds wonderful, so far the only thing I will change is the chicken, I like boneless, skinless chicken breast. I will let yall know how it goes. - 1/21/11
