Better-for-you chocolate chip cookies

2 1/2 cups flour1 tsp salt1 tsp baking soda1 stick (1/2 cup) butter1 cup brown sugar1/2 cup granulated sugar1 ripe banana2 eggs1 tbsp vanilla extract (really, more is better)2 cups (1 bag) semi sweet chocolate chips
preheat oven to 375
In a bowl, mix together flour, salt and baking soda. Set aside.
Soften butter, and cream together butter and both sugars. Add Banana - mash then cream into the butter and sugar mixture. Then add the eggs and vanilla and beat well.
Gradually add the flour, mixing well until you reach a cookie dough consistency. if your banana was particularly large, you may need a touch more flour for ideal consistency. Stir in chocolate chips.
Line a cookie sheet with bakers parchment (optional) and spoon cookies onto sheet with a teaspoon. Flatten each slightly as the lack of butter means they don't spread as well on their own. They cook and rise better if pre-flattened!
Bake in the oven at 375 for roughly 10 minutes or until just starting to brown. Remove and set on rack to cool.
Yes, they are cookies, full of sugar and empty calories. But the whole wheat and half the butter helps immensely! Consider them a health conscious treat!
