Marinated Baked Tofu

Ingredients
tofu, vegetable oil, red wine vinegar, soy sauce, maple syrup, garlic powder, ginger powder
Directions
To prepare, blot your block of tofu with paper towels to get rid of extra moisture, or even press tofu between a few paper towels with a heavy object on top, like a heavy book.

Slice tofu into about 10 1/4-inch slices and lay out on greased baking pan (I use vegetable oil spray). In a bowl, mix up all ingredients of the marinade and coat the tofu on all sides with the liquid mixture using a pastry brush - or use whatever method you want to make sure the marinade coats the tofu on all sides.

Cook until you want, basically - I prefer a crispier tofu, so I bake it at a 425 degree oven for 40 minutes. No need to flip or anything.

Serve with steamed or stir-fried veggies, noodles, meat, whatever you want! Makes about 2 servings, maybe 3 or 4 if it supplements another protein/veggies, although you might want to eat the whole thing once you taste it.
