24-Clove Garlic Chicken

Ingredients
1 chicken, cut up4 tbsp butter24 garlic clovesSauce:3/4 cup maple syrup1/2 tsp salt4 medium baking potatoes*
Directions
Preheat oven to 400F. Melt butter in a large oven-proof pan. Cut up chicken. Separate garlic cloves (remove papery covering).
Add chicken and garlic to pan. Stir to coat with butter. Bake uncovered, basting occasionally for 30 minutes. Pour sauce over and bake another 15-20 minutes. Serve with oven roasted potatoes*.
*Potato chunks can be baked with the chicken. Cut 4 potatoes into quarters. Microwave on high for 5 minutes to par-cook. Combine with chicken and garlic and bake as above.
Good served with broccoli.

    Made this but substituted olive oil for butter, nixed the potatoes and added fresh thyme sprigs. Very awesome and the cloves can be sqished like butter onto a whole grain crusty bread. - 8/28/07
