Mushroom Salad

3 cups of sliced mushrooms (any variety)1 part olive oil ( about 3 tablespoons)1 part lemon juice (about 3 tablespoons)1/4 cup chopped parsley 1 oz hard Parmesan, thinly sliceddash of saltdash of pepper
slice mushrooms. The thinner the slices the better. Whisk together olive oil, lemon juice, parsley, salt, and pepper. Toss dressing with mushrooms. Thinly slice Parmesan on top of salad. Serve.
