Ingredients
* 2.5 c. Leftover Cooked Brown Rice, long grain * 2.5 c. Fresh Mushrooms * 3.5 c. Fresh Spinach * 2/3 c. Soybeans, green * 2 tsp. Parmesan Cheese, grated
Directions
sautee rice and mushrooms while boiling edamame. when edamame is done cooking remove the beans from the pods and set aside. after the mushrooms have cooked down dump in the spinach and mushrooms. let the spinach cook down then plate the food and sprinkle with parmesan cheese
