Gluten Free Corn Bread

Ingredients
1 C. Bob's Red Mill GF All Purpose Flour1 C Arrowhead Mills Organic Yellow Corn Meal2/3 C. Sugar1-1/2 Tablespoons Baking Powder1-1/2 tsp Xanthan Gum1/2 tsp. Salt1-1/4 C Milk3 large eggs1/2 C Canola Oil
Directions
Measure and combine all dry ingredients. Combine all wet ingredients in a separate bowl, mix with fork.

Pour wet ingredients into dry and stir until just blended. Pour into greased 13x9 pan and bake in 350F oven for 18-20 minutes or until toothpick comes out clean. Makes 32 squares

Sugar can be reduced to fit tastes - as the recipe stands it is a bit sweet.
