Turkey & Broccoli Quiche

Ingredients
3/4 C. Bisquick mix2 egg whites1 whole egg1 1/3 C. skim milk1 1b 99% lean ground turkey1 tsp. salt1 tsp. black pepper2 tsp. onion powder1 tsp. minced garlic (equivalent to one clove)1/2 C. water2 C. broccoli florets (fresh or frozen)1 C. finely shredded cheddar cheese (divided)3/4 C. your favorite salsa
Directions
Spray 10" skillet with olive oil cooking spray. Place turkey in high heat skillet and season with salt, pepper and onion powder. Break turkey apart as it cooks. Once turkey is cooked through; add minced garlic and 1/2 C. water and allow water to steam off (careful not to burn the garlic).

In medium mixing bowl, whisk together Bisquick, egg whites, egg, and milk.

Coat a 13" x 9" baking pan with olive oil spray, then add the ground turkey as an even layer. Add the broccoli as another layer and sprinkle with 1 C. of the cheese. Pour egg mixture evenly over turkey and broccoli.

Bake 30 - 35 minutes in a 400'F oven until knife inserted comes out clean.

Sprinkle remaining cheese atop and melt in oven.

Top with 2 Tbsp. salsa per serving.

Makes 6 servings.

*Note: if you use fresh broccoli, the tips of the florets will char a bit. For best results, tent the pan with aluminum foil after 25 minutes baking time.
