Saltine Toffee Cookies

35 Saltine crackers, fat free12 tbsp butter 3/4 cup brown sugar, packed 10 oz semisweet chocolate chips
Preheat oven to 400 degrees F (205 degrees C). Line cookie sheet with aluminum foil and spray with a non-stick cooking spray.
Line cookie sheet with saltine crackers in single layer.
In a saucepan combine the brown sugar and the butter. Bring to a boil and boil for 3 minutes. Immediately pour over saltines and spread to cover crackers completely.
Bake at 400 degrees F (205 degrees C) for 5 to 6 minutes. Remove from oven and sprinkle chocolate chips over the top. Let sit for 5 minutes and spread melted chocolate. Cool completely and break into pieces. Enjoy! :)

Made these for a holiday party. The directions were so easy to follow. I used semi sweet and milk chocolate chips, and added chopped pecans and toasted coconut. Everybody loved them. They could not believe they were made with saltine crackers. Someone said it tasted like almond rocha. - 12/13/13
